A batch of twelve lets one person shape, cure, sand and assemble every piece with the same hand and the same eye. Scale that to hundreds and the work has to be split, standardised and stripped of the judgement that makes it good.
Small batches also mean we can retire a design when it stops feeling right, and try something that might not work. That freedom is the whole point.
